Low Carb Diets - Fad or the Future?

Two years ago, I discovered the benefits of eating a low carbohydrate diet. My wife had purchased Suzanne Somers book, Fast & Easy, and her curiosity was piqued by the promise of improved health and weight loss, while eating wonderful satisfying meals, including scrumptious breakfast choices, carb-safe bread, my favorite chicken dishes and even yummy desserts! She began to investigate the science behind the plan, and shared her discoveries with me. I have to confess; I was skeptical. In my experience, if it sounds too good to be true -- it probably is.

At the time, I was not concerned with losing weight. I was at a healthy weight; I walked daily and ate a healthy diet. So you can imagine my surprise, when I learned that my cholesterol levels had elevated significantly. My doctor confirmed what all the other doctors and scientists had stressed in their books - that the low fat / high carb foods I was eating to stay healthy were actually the CAUSE of my high cholesterol!

As I began to do my own research, I started to understand the correlation between carbs, sugar, insulin surges, weight gain, high cholesterol etc. For the first time, I realized that the real culprit was not healthy fats, but the sugar present in so many of my favorite dishes. No longer could I eat as many fat free cookies as I liked. But I could have Pesto Encrusted Chilean Sea Bass with Asian Style Green Beans and a delicious piece of Cheesecake (prepared the right way, of course). This revelation has been my inspiration for the creation of this website.

Given my own experience and that of the many others who have embraced this lifestyle, I am convinced that low carbohydrate diets are much more than a passing fad. They are quickly becoming the cornerstone for a trimmer, fitter, healthier America. I hope these recipes play a small part in helping to make that a reality for you and your family.
